Crustless Quiche (Lighter Version)

Hello all,

I decided to try a different quiche from my normal one that is lighter and not as rich. I also used sausage instead of bacon. I hope you like it. It’s really quick and simple to put together.

As usual, I use garlic and adobo in everything. Please season to your taste.

Ingredients:

6 eggs
½ Roll Sausage (your fav brand)
2 oz Mushrooms
4 oz Sharp Cheese (shredded)
¼ C. Unsweetened Almond Milk

Brown sausage and set aside. Use grease from sausage to sauté mushrooms. In a bowl mix eggs milk and seasonings of your choice.  In a baking dish layer the sausage, mushrooms and cheese, evenly in that order. Lastly, pour egg mix over make sure other items are covered. Preheat over to 350. Bake for 20-25 mins.

Be sure not to overcook the quiche like I did. I left it to take a shower and overcooked it just a tab. It’s still delish.

Today's Tip: Late night hunger!

This is a bit different from my last tip. That tip was for constant all day hunger. This if for those who are hungry around 1 am. If you are like me you can't go to bed hungry.

If you are hungry late at night, I suggest eggs cooked in butter, fat bombs, or something with a nice protein/fat ratio. Items that are somewhat light that won't keep you up. The fat and protein will fill you up and keep you full until the am. I also like turkey pepperoni filled with laughing cow cheese. Whatever you choose be sure it has fat and protein with almost no carbs.

Menu 9/12 - 9/17

I just finished my menu for the next two weeks. I'm only posting one menu today.

Mon:

Bacon & Cheese Quiche

Parm Crusted Tilapia w/Salad

Smothered Chicken w/Broc & Cheese

Changes Coming

I realized that I am started to feel deprived. I am trying to figure out a way to revamp my diet without causing damage to my hair growing journey. Yes, I want to lose weight and grow my hair out all at the same time. That is one of the reasons why I am afraid to do a short round of HCG. I don't want the restrictions to slow my growth or cause more shedding than I am willing to accept. Did I mention I lack will power to do a HCG round? But, you never know. I hate sounding so vague but I am really uncertain how I am going to work this out. Everyone is more than welcome to send me your ideas or weigh in.

BTW, I still can't jog or run. I don't see in progress from my treatments but I'm going to hang in there.

Disappointed

I found out today it may be another 6 weeks ,at the earliest, before I can return to running. Running is more than just exercise for me. It was my time to clear my head and relax. I will ask my Dr. on Friday what I can do in the meantime but I know he doesn't want me to do anything right at this moment. The good news is they don't have to operate on my youngest daughter's foot. However, my oldest daughter is now in treatment with me. Her neck and mid-back is still bothering her.My dr did fuss at me b/c it was after 5 and I hadn't eaten. When she checked my strength and reflexes they were weak. That's when she asked did I eat and when I said no she had a fit. *sigh* I'm still doing the fasting but the truth is my IBS was acting up and I didn't want to drink water let alone eat. Oh well.

In the end, I refuse to go on another emotional eating binge. I stayed with my diet and I didn't even have a drink. I'm proud of myself. Well, I'm off to plan my food for the next week.

Today I ate pork skins for snack, two slices of LC meatloaf (I think I have the recipe posted here somewhere), and broccoli with cheese. I was supposed to make more Shrimp Alfredo b/c my oldest ate the rest of mine the other night. It seems that my stomach has shrunken and I can't eat much. Oh, my stomach has been acting up for the last couple of weeks. Every time I eat, I get sick.

Crazy Week

I'm still doing the intermittent fasting. I will say I had a rough day the other day and binged. I had pizza, candy bar, and chips. Yeah, it was bad. I had a moment with emotional eating. That is something that I will always have to fight. Now, it's about not beating myself up and keep things moving.

Today I'm having meatloaf and broccoli with cheese for lunch. I might have shrimp alfredo for dinner. I need to continue to work on making my menu. Right now, I'm drained. I have no energy and B-12 doesn't seem to help. Just wanted to give a quick update.

So, how is your week going so far? Are you staying on track with our diet & exercise?

Tough Week

This has been a tough week for me. I have been craving some of everything. I have not eaten as much as I should and I had a few high carb days. Oddly, my nets carbs were under 20 but my total carbs was high. I need to figure out the problem and fix it pronto. Right now, I have a peanut butter & jelly sandwich on my mind. Granted, my version of a pb & j is natural pb, sugar free jelly, and Ezekiel bread. I need to do a super strict Induction next week. The other night I was so hunger that I ate three Atkins bars. Ugh I need some motivation and a healthy dose of self-control.

Low Carb & Endometriosis?

I was researching the topic b/c I have suffered from Endo for more than 10 yrs. It seems there is a debate on whether it helps or hurts. In my opinion, it helps. I feel better with a low carb diet and meds. I'm in less pain now than when I was eating horribly and taking meds. I've also noticed an improvement in my mood. I think it all works together. My hormones are balanced and everything it working together for the greater good.

Has low carb helped you with Endo or PCOS?

Today's Menu 6/24

My menu for today is boring. I'm having leftover. Yep, I'm having butter chicken again tonight. Breakfast was bacon and eggs. I managed to skip lunch by accident. I know, I know...three meals a day!

My oldest daughter just mixed up the marinade for the chicken I'm cooking on the grill tomorrow. We are having that and squash casserole tomorrow for dinner. The squash casserole is pretty easy to make...squash, bacon, onions, fav seasonings, and sharp cheddar cheese.

What did you all have today?

Today's Menu 6/23

I had to add a few things to Fat Secret to get the correct calculations. I use a packaged mix to make Butter Chicken by Kadhaai. I also use boneless skinless chicken thighs instead of chicken breast. I normally make riced cauliflower but that would have put me too far over on carbs today. I am over but not by much.

My total Cals for today are a little low but my carbs went over by 7.5grams. I needed the extra fiber from the MIM today; therefore, I am not stressed about going over my 20 grams of carbs.

I am going to take my diuretic today b/c I had a little rice yesterday with my cornbeef and cabbage. I ordered from a Caribbean restaurant and I did not realized they add rice & peas to this dish.

What did you guys eat today?

Eggplant Parmesan

I have my version of the recipe. I used a couple of recipes I found online and tweaked them. I served the eggplant on a bed of shirataki tofu spaghetti noodles. I used my fav seasonings in addition to Italian seasoning in the parmesan I used t coat the egg plant. I used the eggs with a little water to make the wash.

1 Medium Eggplant, thinly sliced
1.5 Cups of grated parmesan, divided (green container or other)
1 Cup Italian blend cheese or Mozzarella cheese
2 Eggs
1 lb. ground beef, browned
1 tsp minced garlic
1.5 Cups of NSA Spaghetti Sauce or homemade sauce

Slice the eggplant and dip both sides in the egg wash. Toss the eggplant in 1 cup of parmesan to coat. Fry eggplant until golden brown. While frying the eggplant, brown ground beef and drain. After draining add garlic and spaghetti sauce. Layer each item starting with the eggplant, then ground beef, last add Italian cheese amd remaining 1/2 cup of parmesan cheese. (I used fresh grated cheese to top the eggplant)

Low Carb Fish

Last night I decide to fry whiting  for dinner. I've used coconut flour to fry fillets and shrimp but I had never tried it on a whole fish. The fish turned out well. I season my coconut flour the same way I would regular flour. I will say if you are going to try it in a pan with a whole fish, you need to put the fish in skin side down not flesh side b/c it will break..learned that the hard way:)

Kids Food Request

My girls are at it again. They put in a request on the grocery list for apples and oranges for snacks. There was not a sugary snack to be found on their list...not a donut, cake, pie, or cookie requested. I am so proud. When your kids see you eating better they start to make better decisions on their own. *tear*

Did I mention they eat boiled eggs as snacks also? *happy dance*

ETA: The girls picked up flavored instead of juice or diet soda. They made my day. They did not attempt to ask for juice. They went straight to flavored water and a case of regular water just for them.

Still hanging in there...

I have a few of my staples back in stock and I'm eating properly. I'm not eating as much. I must confess I've had one to many macadamias to make up for not cooking. However, I haven't strayed since my Olive Garden incident. I'm bummed about not being able to exercise but I'm making the best of it. I'm determined to get back to 140 if it kills me and a few other people.

My daughters are doing OK since the accident. They are still sore but I keep saying it could've been worse.

What's on you agenda for the week?

Low Carb & Car Accident

Last week was a difficult week for me. My daughters and I were riding with our neighbor and someone hit us from behind. I was terrified that something was wrong with my daughters, especially the youngest. When we got hit she started crying and scream while reaching for her side and back. Needless to say, I wanted to drown my sorry, frustration, and worry in a container of banana pudding ice cream. Yes, as I previously confessed I am an emotional eater. My emotional eating is what normally throws me off the wagon. Anywho, I was fine and stayed strong until Fri night when a friend came over with my favorite items from Olive Garden. I was weak and fell off the wagon for a second. I'm happy to say I got right back on and my daughters are ok. They are sore and not 100% but I'm just happy they are alive and nothing serious was wrong with them. As for me, I'm wearing a lovely neck-brace that I hope to get off tomorrow when I got to the Trauma Clinic. I haven't been able to leave my house or grocery shop. I feel like a jail bird. Luckily, I do have some LC staples to hold me over. My new favorite item for breakfast has been MIM b/c they are quick & easy to make. Sadly, I ran out of eggs today. Must go to the grocery store some kind of way tomorrow. Thanks for viewing my rant.

How was your weekend? Any new recipes?

Kids Better Eating Habits...

I have two wonderful daughters that are starting to be influenced by my low carb WOE. They love Chocolate MIMs, LC Cheesecake Muffins, Pumpkin Bake, and a host of LC entrees. However, they are not LCing with me. I still allow them to eat carbs but with limits. While making the grocery list my youngest daughter asked me to buy a bag of french fries and I gave her the I don't think so look. I suggested they make their own without the extra junk in them. They thought it was a great idea and then the youngest asks if they can make potato chips....of course. Fresh made with no preservatives...as much as I know potatoes are the enemy, I'm glad they are being creative and finding healthier ways to eat

Memorial Day Weekend

I'm not doing anything special for this weekend. I'm not in the mood to fight with the grill. So, I'm just doing some regular old cooking. I'm making two dinners today, pork chops and eggplant parmesan. I'm having the parm for dinner tomorrow and the chops for dinner tonight.

My menu for today is very simple:

Snack: Cashews (yes, they are not allowed during induction but I have a nut habit I'm trying to kick)
B: Bacon and eggs
L: Three cheese sausage and sauerkraut (I found the sausage at Sam's)
D: Baked pork chops and broccoli w/cheese and bacon

Did anyone attend any cookout? What did you eat this weekend?

Cheat Day Gone Wrong!

Well, I have a planned cheat approx every two weeks, normally with no problem. This time around I ran into an issue. I was going to make low carb brownies and serve them with no sugar added (NSA) ice cream. Well, I was too tired to make the homemade brownies and opted for the box stuff. I know, I know. Anywho, my one cheat desert turned into a two day cheat desert. I ate the rest of my meals on plan but I had brownies and ice cream on two days instead of one. I woke up Sun feeling bloated and super tired from the extra carbs. I noticed when I do my normal one meal cheat I wake up the next day unaffected by what I had the day before. I think the two day in a row with little water did me in. I feel horrible. I am on plan as of Sun without any legal snacks.

I think it is important to add a cheat day in when you are trying to lose weight. I know when I was dieting after having my daughters, I my ex-husband and I would have a cheat day every Sat. Yes, he was losing weight with me because he gained sympathy weight. Hehe I'm sure there are plenty of men that know about gaining weight while their wife is pregnant. LOL

Anwyho, my next planned cheat is Feb 4th or 5th. I haven't decided what I want for my cheat. Maybe someone will give me an idea.

Time to move on...I've been in the Induction phase for more than a month now, as of the 13th. I said I was going to move up to 25 carb per day on the 15th and attempt carb cycling. I have tried to increase my legal carbs but I'm still having trouble eating, even after the cheat. I received Jillian Michael's 30 Day Shred the other day and I'm excited about starting that this week. Wish me luck!!!

My low carb menu for today:

B: Cheeseburger Quiche (from last week)
L: Caribbean wings  (wal-mart brand) with ranch dressing
D: Shrimp, mushroom, broccoli alfredo with tofu shirataki noodles and tilapia
S: 3 Asparagus spears and 2 tomato-mozzarella cheese chicken sausage (yum)

I drank some Chiro-Klenz last night and it has been cleaning me out all day. So, I have been downing water and tea today like a mad woman.
