Heroin Wings - Adapted Version

Heroin wings are a staple among low carbers. I have heard about them for years but never gave them a try until recently.  I think they are quite yummy and I wanted to share my adapted version of the recipe. I do apologize but I do not know where I found the original recipe.

4 Chicken wings, cut into sections
1/4 C Shredded Parmesan cheese
1 tsp Parsley
1/4 tsp Oregano
1/2 tsp Paprika
1/8 tsp salt
1/2 Stick Butter
Pepper to taste

I also added adobo and garlic powder. That just me and I add them to everything.

Direction:
Preheat over to 350 degrees. In a bowl, combine Parmesan, and spices. Melt butter in a separate baking dish. Dip wings in butter and follow by dredging in Parm and spice mix. Place wings on a lined baking tray and bake for 45 mins.

Low Carb Cinnamon Coffeecake (My Version)

I hope everyone has had a wonderful holiday. This year, I didn't cook. I only made dessert. My plan was to go out visiting but I started hurting to bad to get out.

Anywho, I made a Cinnamon Roll Coffee Cake. I found the recipe while hanging out in one of the low carb groups I belong to on Facebook. The original recipe came from All Day I Dream About Food. I made some tweak to the recipe based on what I had in the kitchen. If you want to try the original version, please be sure to visit her site. I'm sure my version doesn't take the same because I butchered the instructions. Below is my version:

Yield: 9 servings (Her's says 16 but I think I cut mine too big

Crustless Quiche (Lighter Version)

Hello all,

I decided to try a different quiche from my normal one that is lighter and not as rich. I also used sausage instead of bacon. I hope you like it. It’s really quick and simple to put together.

As usual, I use garlic and adobo in everything. Please season to your taste.

Ingredients:

6 eggs
½ Roll Sausage (your fav brand)
2 oz Mushrooms
4 oz Sharp Cheese (shredded)
¼ C. Unsweetened Almond Milk

Brown sausage and set aside. Use grease from sausage to sauté mushrooms. In a bowl mix eggs milk and seasonings of your choice.  In a baking dish layer the sausage, mushrooms and cheese, evenly in that order. Lastly, pour egg mix over make sure other items are covered. Preheat over to 350. Bake for 20-25 mins.

Be sure not to overcook the quiche like I did. I left it to take a shower and overcooked it just a tab. It’s still delish.

Chicken Roll Ups

I'm sorry but this post doesn't have a pic. I ate it before I remembered to take a pic. I know I'm horrible. I'll do better:)

Anywho, this recipe is super simple. I found it a couple of years ago online and made it my own. I would suggest using large chicken breast and splitting them in half to make two servings. I use garlic and adobo seasoning in everything.

Ingredients:

3 Large Chicken Breast (split in half)
8oz Cream Cheese (softned)
1/4 C Dried Chives (or to your taste)
12 slices Bacon

Toothpics

Cut each breast in half. Mix with chives and your favorite seasonings. Season breast to your liking and lay breast with cut side up. Place 2 TB of cream cheese on each breast. Roll each breast and wrap with two slices of bacon. Use toothpics to secure bacon and ends of chicken. Place in an oven at 350 for 30-45 mins or until bacon is done.

Eggplant Bake

I was out of Parmesan cheese so I had to think quick.

Sorry the pic is so dark...cell phone camera

1 lb ground beef, cooked and drained
1 large eggplant, cut into chunks
1 1/2 C. of Tomato and Basil sauce (low carb sauce of your choice)

2 Large Eggs

2 slices of Sharp Provolone Cheese (that was all I had)
3 slices of Sharp Cheddar Cheese

Italian Seasoning

Brown ground beef and drain. Use eggs mixed with water to create an egg wash. Toss eggplant in wash. Then place in LC flour of your choice. I used soya flour. Deep fry until brown and drain. In an oven safe dish mix ground beef, eggplant, and sauce. Top with cheese and sprinkle with Italian seasoning. Bake at 350 for 20-25 mins or until cheese has browned slightly.

I used my usual seasoning on the eggplant batter and ground beef: adobo, garlic, lawry's, salt, pepper and onion powder.

Sizzling-Lowcarb: Mediterranean Flax Bread

Reblogged from Saskia's Sizzlizng Lowcarb Blog: This recipe was posted by one of the members of a low carb group I belong to on FB.

Sizzling-Lowcarb: Mediterranean Flax Bread:

"I used the Atkins Muffin in a Minute (MiM) recipe as a base for this "bread". Because of the grainy texture of the mim's I prefer baking them in the oven. I use this 'bread' to make grilled cheese sandwiches or as toast. I got 28 slices out of the entire loaf. If you plan on making grilled cheese sandwiches with them you will probably use 4 slices per person. That is why I gave the nutritional info per serving of 4 slices."

Fat Bombs

I got this recipe from Stacy who is a member of one of the groups I belong to. It's one of those things that has to grow on you if you are not a dark chocolate fan. This recipe is meant to be an easy means to get your protein and fat in. I ate one with a cup of coffee for breakfast. Also, I was running low on coconut oil so I only use 1/2 C.

Recipe:

1 C Peanut Butter
1 C Coconut Oil
1 Stick Butter
1/4 C Walnut Pieces

Chocolate Topping
1 Tbl Sugar Free Vanilla Syrup
2 Squares Unsweetened Baker's Chocolate
2 Tbl Butter

Melt peanut butter, coconut oil, and butter until it's easy to mix. Line muffin pan with muffin tins. Place walnut pieces in the bottom of each tin. Fill is tin with PB mixture. Place in fridge until it solidifies. Melt chocolate and butter. Mix in syrup and top each tin with chocolate mixture.

Chocolate MIM (Muffin in a Minute)

The golden and brown flaxseed give the muffin different flavor levels. If you want a stronger chocolate flavor, it is better to use the brown flaxseed. However, if you want a milder flavor use the golden flaxseed. I found both at Walmart. I tweaked the recipe slightly b/c I no longer use butter.

Cals: 337kcal | fat: 28.82g | carbs: 13.87g | prot: 13.96g
1/4 C. Flaxseed
1/2 tsp. Baking Powder
1Tbl. Hershey's Cocoa Powder
1 Large Egg
2 tsp. Ghee
2 pks Splenda
2 tsp heavy cream

Mix all dry ingredients in a cup. Add egg, cream, ghee and mix well. Microwave for 1 min.

This recipe can be used to make sandwich bread. Remove chocolate and substitute with seasoning of your choice. It would be better to use golden flaxseed for bread. See below:

Grilled Leg Quarters

I saw the original recipe in the Winn-Dixie Circular for this week. I decided to tweak it and make it Atkins friendly. I hope to be feeling well enough to give it a try this weekend.

1 tsp Splenda
1 tsp seasoning salt
1 tsp paprika
1 tsp pepper
1 tsp garlic powder
1 tsp adobo seasoning
2 tbsp olive oil

Mix all marinade ingredients in a zip lock bag and add chicken. Chill and marinade for 4 hours. Grill 30 to 40 mins.

If you decide to give it a try be sure to leave me a comment and tell me how it turned out.

Reduced Carb MIM

I am a 20g total carber and I wanted to see if I could tweak the MIM. It taste like the regular one but not as much chocolate flavor. I think I might adjust the cocoa amount. This one is lighter in density that the regular MIM. Give it a try and let me know what you think. If you like it or not.

2 Tbl Brown flaxseed
1/4 tsp. Baking Powder
1/2 Tbl. Hershey's Cocoa Powder
1 Large Egg
1tsp. Ghee
1pk Splenda
1tsp heavy cream

Mix all dry ingredients in a bowl. Next add wet ingredients. Transfer to microwave safe dish. Microwave from 90 seconds.

Easy Low Carb Crab Cakes

Growing up in Maryland and Virginia had it's advantages. During the summer we lived off fresh seafood and one of my favorite foods was crab cakes. My father was the cook in our family and he made the absolute best crab cakes.

When I started my low carb journey, I was concerned about having to give up one of my favorite things to eat, but I decided to create a simple low carb crab cake recipe that was tasty and only took a few minutes to prepare.

Here is my version of low carb crab cakes. They are induction friendly.

12 oz lump crab meat
1T golden flaxseed
1T of Duke's mayo
1tsp of Old bay seasoning
2 tsp dried parsley
1 tsp mustard
1 large egg
garlic powder, salt, and pepper to taste

I mixed all the ingredients in one bowl and fried in canola oil. They were very tasty and I didn't miss the breadcrumbs that I normally use to bind them.

Please share this recipe with your friends. Do you have a crab cake recipe that you would like to share?

Green Smoothie

I finally got around to actually make a green smoothie today. Lately, I have been buying the premade smoothies. I will say with the wheatgerm and berries I got a little chew out of it. That worked for me b/c it satisfied the need to chew. It wasn't my favorite smoothie that I've made but I will post it just in case someone wants to try it.

Smoothie for today:

2C spinach
1T wheatgerm
1T Kyo-green
1/2 Ripe banana
1/2C carrot juice
1C Great Value Berry Medley
1/2C Almond Milk

Here is the Berry Medley package

If you have a recipe for me please send it to me. I like trying new things.
