Chicken Roll Ups





I'm sorry but this post doesn't have a pic. I ate it before I remembered to take a pic. I know I'm horrible. I'll do better:)

Anywho, this recipe is super simple. I found it a couple of years ago online and made it my own. I would suggest using large chicken breast and splitting them in half to make two servings. I use garlic and adobo seasoning in everything.


Ingredients:

3 Large Chicken Breast (split in half)
8oz Cream Cheese (softned)
1/4 C Dried Chives (or to your taste)
12 slices Bacon

Toothpics

Cut each breast in half. Mix with chives and your favorite seasonings. Season breast to your liking and lay breast with cut side up. Place 2 TB of cream cheese on each breast. Roll each breast and wrap with two slices of bacon. Use toothpics to secure bacon and ends of chicken. Place in an oven at 350 for 30-45 mins or until bacon is done.

Goals for August?


                                 



July is coming to an end. I didn't meet my measurement goal but as I stated before I believe I know why. I'm starting to think about my August goals so that I can post them. I know I'm keeping my two a days but I think I'm going to back off beef a bit. I realize I ate a lot of beef this last month. Seriously more than normal. Anywho, come on everyone and let's start planning for next month.

Run for my life...










July is coming to an end. I didn't reach my goal for the month but I'm fully aware of why. In the beginning of the month I had waaayyy too much mango margarita mix. I swole up like a balloon. It was not cute. My face blew up and everything. Once that came down, I had an epiphany about my birthday. I will be 35 and it's five years from the age my mother died. I realized that I began my journey to prevent certain illnesses but I really hadn't dedicated 100%. You get out what you put in. I was losing but I wasn't feeling as good I should health wise. So, a couple of weeks ago I went all in. I started doing two a days and I just started pushing my body harder. I began running through the pain instead of easing up when it began. In two weeks, I see a differance already. Which brings me to reason number two...working out so hard has caused a pause in my weight loss. I know I'm building muscle and I'm fine with that. I'm sure next month I will start to see the .25" drop again. But if I don't, I know that will be the result of Insanity. Yep, I said INSANITY!!!  I'm waiting for my disks to arrive so I can begin on Mon. I'm going to make it drop one way or another to meet my birthday goal and to feel better overall.

So, if you need me I will be running at 430 am or 545 (depending on which running partner I'm with) and again at 7pm. I refuse to let my illnesses stop me from doing anything. They may slow me down but never will they stop me.


Today's Tip: Late night hunger!

This is a bit different from my last tip. That tip was for constant all day hunger. This if for those who are hungry around 1 am. If you are like me you can't go to bed hungry.

If you are hungry late at night, I suggest eggs cooked in butter, fat bombs, or something with a nice protein/fat ratio. Items that are somewhat light that won't keep you up. The fat and protein will fill you up and keep you full until the am. I also like turkey pepperoni filled with laughing cow cheese. Whatever you choose be sure it has fat and protein with almost no carbs.

Hunger Issues?

If you are low carbing and experiencing hunger it could be due to one of a few issues.


1. Not enough fat or protein in your diet. First try upping your fat intake to see if that will help


2. You are close to goal weight and exercising. I've experienced this myself. When I was within 10 lbs and running and working out, I was often ravenous shortly after finished my exercise.


3. You are simply not eating enough. It's low carb not low calorie. Women should be eating b/t 1500-1800 cals per day if they are doing Atkins. Try eating a bit more or including snacks durng the day. 


4. You may be dehydrated. Some people confuse hunger with their body's please for hydration


If you are able to find Keto-stix check to see if you are in ketosis. Most people in ketosis report diminished hunger. Please don't worry b/c the sticks don't work for everyone but they do for most.

New Episode of Run For My Life

After taking a week off due to illness, I'm back at it. My dr told me what I need to do to prevent issues and I'm on it. My only real issues are the blisters I keep getting. I did some online research and I saw duct tape and powder mentioned. I didn't pay it much mind and opted for moleskin and vaseline. However, those two didn't work. Another LC blogger told me, on Twitter, that she has tried the duct tape and it worked. So, tomorrow I will be at the Dollar Store picking up some duct tape to tape my feet up. I'm praying this does the trick b/c I don't want to give up now.

I saw this sign and it says how I feel at the moment.

May Goals

I know I'm a little late posting these but better late than never.

1. Lose 1" off my thighs (beginning measurement around 31.25)

2. Drink at least 3 liters of water each day

3. Take ALL vitamins daily

4. Run/Walk 3xs per week

5. Cross train or weight train with kettlebells 2xs per week

6. Try one new recipe each week

7. Fast each Sunday

8. Meal plan each week

9. NO CHEATING!!!



Does anyone have any goals set for the month?

Low Carb Shrimp & Grits

Please excuse the extra butter!


Grits

8 oz Cauliflower
1 oz Cream Cheese
1/4 C Sharp Cheddar Cheese
1/4 C Parmesan Cheese
1 T Butter
1T Heavy Cream
Salt & Pepper to taste
Pinch Old Bay Seasoning (optional)

Cook Cauliflower and drain. Add cream and mash. Add all cheeses, butter, salt, & pepper. Stir.

Shrimp

3T Butter
1/2 Can of Mushrooms
2T Green Onions, chopped
2 Slices Bacon, chopped
2 Cloves of Garlic
1/2 Lb Large Shrimp, peeled & deveined

 Cook bacon until almost done and remove from heat. Pour off grease. Chop or cut bacon into pieces.  Use 1T of butter saute garlic. Add mushrooms. Cook until slightly browned. Add shrimp, remaining butter, green onions, & bacon. Cook until shrimp are done.



Chocolate MIM (Muffin in a Minute)

The golden and brown flaxseed give the muffin different flavor levels. If you want a stronger chocolate flavor, it is better to use the brown flaxseed. However, if you want a milder flavor use the golden flaxseed. I found both at Walmart. I tweaked the recipe slightly b/c I no longer use butter.

Cals: 337kcal | fat: 28.82g | carbs: 13.87g | prot: 13.96g
1/4 C. Flaxseed
1/2 tsp. Baking Powder
1Tbl. Hershey's Cocoa Powder
1 Large Egg
2 tsp. Ghee
2 pks Splenda
2 tsp heavy cream

Mix all dry ingredients in a cup. Add egg, cream, ghee and mix well. Microwave for 1 min.

This recipe can be used to make sandwich bread. Remove chocolate and substitute with seasoning of your choice. It would be better to use golden flaxseed for bread. See below:


Reduced Carb MIM

I am a 20g total carber and I wanted to see if I could tweak the MIM. It taste like the regular one but not as much chocolate flavor. I think I might adjust the cocoa amount. This one is lighter in density that the regular MIM. Give it a try and let me know what you think. If you like it or not.



2 Tbl Brown flaxseed
1/4 tsp. Baking Powder
1/2 Tbl. Hershey's Cocoa Powder
1 Large Egg
1tsp. Ghee
1pk Splenda
1tsp heavy cream

Mix all dry ingredients in a bowl. Next add wet ingredients. Transfer to microwave safe dish. Microwave from 90 seconds.

It's a good day

I went to the ENT to have my allergy test done. Turns out I'm allergic to everything. I look like someone beat me on the inside of my arms.I would post a pic but I don't want anyone to fuss about how unattractive my arms are right now. LOL

Anyway, The MA wasn't going to weigh me until I said something about knowing I lost weight but I wasn't sure. He said he was going to put my old weight in but when I said that he got excited. He begged me to get on the scale so I did, backwards. Yep, that's the only way I'm getting my butt on the scale face forward until my size 14 jeans fit how I want them to fit. That's not to far off but still. He said I lost 10 lbs. I was happy but some of that was water. I was swollen like you wouldn't believe for the last couple of weeks. My ankles were hurting and my face looked huge. I have a pic on my growitgirl page of me with my new wig and swollen face. I knew my face went down b/c I don't see a double chin. I just hate that I swell up so bad. I would like to know how much of that was actual weight but I'm fine.

I have seriously cut back and I've been walking more the last week. So, I will keep that up. I haven't had a juice in a few days out of being to dang tired. However, I will be back on that in the am.

Not Eating

I've been so stressed the last few days that I haven't had anything to eat since Tues. I know it's not healthy but I just didn't have any type of an appetite. I'm going to try and eat some red beans and rice w/brown rice along with some baked pork chops.

Low Carb: 2/16

I did fine yesterday until I had an attack of the turtles. It was down hill from there. I ended up eating about five chocolates out of my Valentine's box and gave the rest to my daughters. Then I had a nice piece of Jamaican spice bun. I tried to redeem my day my finishing up with a normal LC meal. I made Cumin mushrooms and chicken breast. The recipe I used was from a 15 min LC cookbook but I need to tweet the recipe b/c something was off about it. The I found the marinade at walmart and wanted to give it a try. My juice for breakfast was mango, carrot juice, spinach, apple, and orange.

I'm still not well enough to run. I guess my dr was right and it will be awhile before I can. I'm not going to complain but I am going to try to do some walking today at a speed that is lower than my usual.
